Chatpatty pakory recipe
Chatpatty pakoras are a delicious and popular snack in South Asian cuisine. These crispy fritters are made with a variety of ingredients such as chickpea flour, spices, and vegetables. Here is a simple recipe to make chatpatty pakoras:
Ingredients:
• 1 cup chickpea flour (besan)
• 1/4 cup rice flour
• 1/4 teaspoon baking soda
• 1/2 teaspoon cumin seeds
• 1/2 teaspoon coriander powder
• 1/2 teaspoon red chili powder
• 1/2 teaspoon salt (adjust to taste)
• 1/4 teaspoon turmeric powder
• 1/4 teaspoon ajwain (carom seeds)
• 1/2 cup finely chopped onion
• 1/2 cup finely chopped spinach
• 1/2 cup finely chopped potato
• 1/2 cup finely chopped cauliflower
• 1/4 cup chopped cilantro
• 1/4 cup chopped mint leaves
• Oil for deep frying
Instructions:
1. In a large mixing bowl, combine the chickpea flour, rice flour, baking soda, cumin seeds, coriander powder, red chili powder, salt, turmeric powder, and ajwain.
2. Add water to the dry ingredients, slowly, until a smooth and thick batter is formed. The consistency should be similar to pancake batter.
3. Add the chopped onion, spinach, potato, cauliflower, cilantro, and mint leaves to the batter. Mix well.
4. Heat oil in a deep frying pan over medium-high heat.
5. Once the oil is hot, drop spoonfuls of the pakora batter into the oil, taking care not to overcrowd the pan. Fry the pakoras until golden brown and crispy, turning them over occasionally to ensure even cooking.

6. Remove the pakoras from the oil using a slotted spoon and place them on a paper towel-lined plate to absorb excess oil.
7. Serve the chatpatty pakoras hot with your favorite chutney or sauce.
